First, you grill your steaks 4 inches above medium temperature. Remember, that you can use either gas or charcoal heat*.
Turn your steaks over to the other side only once. You can do this halfway through the grilling time.
Use tongs, instead of a fork, this is best so that you do not pierce the meat.
For best results on grilling your steaks, use a meat thermometer. Use the chart below to cook your steaks to your desired perfection.
If you like your steak rare, remove your steak from the grill when the thermometer reads 135 degrees.
Final cooked temperature after sitting for 2 minutes should read 140 degrees.
If you like your steak medium rare, remove your steak from the grill when thermometer reads 140 degrees.
Final cooked temperature after sitting for 2 minutes should read 145 degrees.
If you like your steak medium, remove your steak from the grill when thermometer reads 150 degrees.
Final cooked temperature after sitting for 2 minutes should read 155 degrees.
If you like your steak well done, remove your steak from the grill when thermometer reads 165 degrees.
Final cooked temperature after sitting for 2 minutes should read 170 degrees.
